Chocolate & fudge butterfly cupcakes

The other day I was looking through my Instagram and noticed that I haven’t actually baked in such a long time, when I say such a long time I MEAN APRIL! APRIL! Therefore, I needed to whack the scales out and get some baking done. After I baked these delicious cupcakes, it reminded me of how much I actually love baking and I need to make more time for it.

– LET’S GET STARTED –

Ingredients that you will need for chocolate sponge (12)

4 tbsp (boiling ) water

40g cocoa powder

3 eggs

180g (unsalted)

165g Unrefined golden sugar

115g self raising flour

1 tsp baking powder

A packet of fudge pieces

Ingredients that you will need for decoration

Royal icing

Butterfly wafers

Icing sugar

Pink icing gel

Biscuit Cutter

Equipment that you will need

Scales

Mixing Bowl

spatula

cupcake cakes & cupcake tins

Spoon

Piping bag

Cooling wrack

Method:

Step one: line a cake tin with the cases. Preheat the oven to 200oc / 400oF / Gas mark 6

Step two: sift the cocoa powder into a bowl and then pour in the boiling water and mix together with a spoon to create a thick spreadable paste. After you get to this stage, add in the remaining ingredients and mix together with the spatula. Add in the fudge pieces, this part is entirely up to you.

Step three: put a tiny bit of the mixture inside the cupcake case, then add a couple of fudge pieces, then place some more mixture on top of the fudge pieces. This is so you will have the fudge pieces inside the middle of the cupcakes. Keep doing this for every cupcake. Then put them in the oven for 15-17 minutes.  They need to be well risen and springy when you touch them.

Step three: while the cupcakes are in the oven you can start on the icing. Roll out the royal icing and using a biscuit cutter ( of any shape that you want the icing to be on top ) Then cut out the icing depending on how many cupcakes there are.

Step four: sift some icing sugar in a small bowl and add in water as you go, you need it to be the perfect consistency that you can drip it onto the cake. You don’t want it to be too thick or too watery. Then add in the pink gel and mix together.

Step five: bring out the cupcakes and place them on a wire rack and wait for them to cool down. On one side of the royal icing that has been cut out, put a tiny bit of icing sugar on it and sit it down on the top of the cupcake. This is going to stop the royal icing from falling off of the cupcakes and will give it something to stick to. Keep doing this to all of them. Then using the pink icing create strokes across the top of the cupcake and the icing and then place a butterfly wafer on top. You are finished 🙂

COME TO EGYPT WITH ME

Hey everyone and welcome back to another post.

I have literally not posted in such a long time, but I AM BACK! and I have a brand new post all about my time away in Egypt!

I had the best time away ever! the weather was sooo hot, at some points it was 49 degrees! Honestly so hot! The hotel that we stayed in was called the Sunrise Royal Makadi Bay hotel, it was incredible. We had the Red Sea beach right at our hotel. Everything about it was amazing. The food, the restaurants and the selection of different restaurants, the staff were such hard workers and really lovely people, the room and its service was amazing too. One of the best places I have ever stayed, I would 10000% recommend staying there if you are looking to go to Egypt. While there we had a couple of days out, we rode camels, went quad biking and went on a boat. We also went to one of the biggest water parks ever, but obviously didn’t take any pictures because we had to keep them in a locker. The hotel that we stayed in was around 20/30 minutes from the main town of Hurghada and we got there by mini bus. It was about 25 minutes to the airport.

Our room was really really nice. We had the best air con ever, which meant that we took lots of naps because the air con was soooo lovely in that heat. The man who cleaned our room everyday, was such a hard worker. Every time we went back to our hotel room after breakfast, the cleaner would always leave us a surprise on our bed made from towels. We had a range of different things, to love hearts, to roses, we even had a monkey swinging from the ceiling as we walked through our hotel door. IT WAS AMAZING!

On one of the days that we were out there, we went to a sand museum and we also did quad biking. The quad biking was brilliant, we were on the bikes for around 30 minutes then we went in a buggy. The sand museum was incredible!!

On our next day out, we went for a tour around the city of Hurghada and went on a boat/submarine. This was the longest day out ever, we left around 9ish and got back around 6/7 I think.

We also went camel riding and this was so fun. It was so surreal getting on and off the camel because they really lent forward which basically sent you flying forward too. It was interesting riding them as I have always wondered what it was like.

We had the most amazing time there! I want to go back next year with the whole of my family as I know they would love it so much! would 100000% recommend going there because it honestly is amazing and I couldn’t fault the hotel at all.

I LOVE THAT YOU CAN PERSONALISE THIS, it is such a different thing to be able to personalise. normally with notepads you can add words etc.. but I have never seen pictures on a notebook. I added two pictures onto this notebook and I think my dad is going to love it. It is lined inside aswell which is good! The Retro Tech Dad Ceramic Mug is so so so cute! I know that my dad will use this mug a lot. I have two pictures on this mug one of me and my dad at the age I am now and another picture of me as a baby. < you have seen baby Sophia lol. I think this personalised is something that your dad would love for Father’s Day as it is something that he might always use. This mug retails for £7.99, once again perfect price.

Personalised Retro Tech Chocolate Bar

The Retro Tech Chocolate Bar  is GENIUS! I have NEVER seen a personalised chocolate bar before and I couldn’t think of anything better. I know my dad will love this because let’a face it, who doesn’t love chocolate?! and it is personalised can I just say. There are two pictures of me and my dad on this and, yes that is correct the picture on the right is myself and my dad wearing a face mask. By any chance of my dad seeing this post, I hope you don’t mind dad 🙂 haha. This retails for £5.99 which is an absolute bargain! It is such a good price because you are getting great quality chocolate with personalised wrapping, you can’t go wrong!

I love this brand a lot because they have a great selection of Father’s Day gifts and a lot of them are personalised. I love personalised items because it makes the gift more personal, I will always try and get people personalised gifts because it means more. Personalised Parties have a lot of products at such a reasonable price, which I think is amazing. I have worked with this brand before and they have great service, amazing quality products and all products are super affordable!

I think my dad will be so happy with these gifts because they are things that he will use. The notepad is definitely going to come in handy, because when don’t you need a notebook? I love that you can personalise a lot of the gifts because you can even make it funny and add some really embarrassing pictures of your dad, stick it onto a mug and he has to live with that haha.  I am obviously going to get my dad other presents, but these make great add on presents and I know that he will love them.

21ST BIRTHDAY

Hey guys!

As some of you may know my birthday was on the 9th of May and I turned 21! anddddd… I don’t feel any different lol! just joking, I feel like I am a woman now and in America i would be able to drink! This post is literally going to be like a vlog, but In picture form so it may be all over the place.

Anyway, if you don’t follow me on Instagram and snapchat (sophiatranterxx), you most definitely should as I share a lot on my stories!

So my boyfriend and myself do this thing, for our birthdays we do each other a birthday breakfast which means that we can have WHATEVER we want for breakfast and the other one has to make it. This year I had pancakes, with fruit and strawberry sauce. I then also had a skinny iced hazelnut coffee with that, as I am currently obsessed with it!

For my birthday, my mum very kindly surprised me with a spa day. So we got up super early and we headed to Bannatyne Spa in Ashford. We had 4 treatments, so we had a back massage, a face massage and a hand and arm massage. We then got a manicure and had afternoon tea. I just wanted to say, thank you to the two girls who gave us the best massages ever!

We were given a bag with a towel, flip flops and a robe inside to wear around the spa. We were allowed to keep the bag and the flip flops after,  which was really lovely. The first thing we had done was like a lava stone chair thingie, and basically you sit on it and it is really warm on your back which is meant to be really good for you. My mum loved this one, she nearly fell asleep!

Then after this, we were called into this lovely chilled room where we were going to have our treatments done. As you walked in, they had calming music playing and it was so dark. Below are pictures of my bed that I was laying in while having these treatments done. Each treatment was 15 minutes and it was the best hour of my life lol.

You have to wear a swimming costume or bikini when you are in the spa, and this is the one that I wore. It is from Primark and I love it!

We had our back massage and it was the best thing ever. It was so relaxing! we then had an arm and hand massage and then we had a face massage. They were all so amazing and the two girls who did our massages were really lovely and kind. After this, we then got our nails done.

This is the colour that I went for! and it is GREAT!

I brought one of the products that Lily used on my face when she did my facial. I brought the Elemis ginseng toner and it is really good and very quickly became one of my favourite skincare products. I have been using it since I got it and I have been really enjoying using it.

After this we then had afternoon tea and… tell me that the picture below doesn’t make you happy.

RIGHT?! this picture makes me so happy because there is a lot of good food here. So we had little cakes and the little chocolate brownies you see on top there, with the raspberries, OMG.. BEST THING IN MY LIFE. They weren’t even brownies, they were just like a clump of chocolate that was goodie and just so YUMMY. Then we also had some scones and some yummy sandwiches!

The tea was so lovely and this made us feel even more relaxed after and it was a great touch to the morning so far.

After the spa, we then went home and started to get ready as we were going out for a meal. We went to Jamie’s Italian at Bluewater, which is a shopping centre in Kent and the food was delicious. I had a pizza (OBVS), had a couple of cocktails and had some squid! Do you like squid? because I love it!

After we had eaten, the lights got dimmer and they brought my cake out. I didn’t know this was happening and had no clue that my mum got a cake made for me..

I AM OBSESSED! I love it so much and was so happy with this cake. If you know me then you know that I am the biggest Harry Potter fan ever and this cake made me so so so happy! the lady who made it, did such an amazing job and I couldn’t thank her enough. She is really good at making cakes and she also made my sisters baby shower cake.

After the meal we all went home and were so full that we were feeling kind of sleepy! we just relaxed for the rest of the night. My room was such a mess because, let me tell you why.. I got so much stuff that I didn’t know where to put it all. I was struggling because my bed was full, I mean FULL of presents and I had been completely spoilt. After trying to put the presents to one side, I got into bed and I was sooo happy.

I had the best birthday ever and I got very spoilt! I will always remember this day. Thank you so much again to all of my family for making my 21st so special! my mum is the best person in this world so if you are reading mum, thank you again! my mum made my birthday the most special day ever and she put so much hard work into the day. Thank you to everyone also who commented on my Instagram pictures and on my Facebook wall. I was SO overwhelmed with the amount of likes and comments on my Instagram pictures that day. I received a lot of love and it made me very happy.

Valentine’s day snacks

Hey guys and welcome back to another post. With Valentines day just around the corner I thought this post would be perfect for those who are looking for the perfect snacks for Valentines day. This isn’t technically baking, but sort of comes under this category.

– LETS GET STARTED –

Firstly, you are going to want to melt some chocolate over the hob. I decided to use dark chocolate because I don’t know why but, dark chocolate fit Valentine’s day more for me. Break up chocolate and place it in a clear bowl, then get a pan and fill it up with water and put it on the hob. Place the bowl on the pan (making sure that the water doesn’t touch the bottom on the bowl) continue to stir until all choc is melted.

H A L F   C H O C   P R E T Z E L S

Ingredients:

Sea salted pretzels

Melted chocolate

Red hundreds and thousands

Equipment:

A plate

Method:

Step one: Place the pretzels in the bowl of melted chocolate and hold it above the bowl so the excess chocolate will drop off the pretzel.

Step two: Once all of the chocolate from the pretzel has stopped running, dip the chocolate side in the red hundreds and thousands.

Step three: Place the pretzels on a plate and then when you have done as many as you like, place them in the fridge for 10-15 minutes. Once the chocolate is completely dry, they are ready. Be careful when trying to get them off of the plate as you don’t want to break them (which I did multiple times) maybe use a knife and dig around the chocolate side of the pretzel. It should move off the plate very easy.

C H O C O L A T E   S T R A W B S

Ingredients:

Strawberries

Melted chocolate

Icing / sprinkles that you want to decorate your strawberries with

Equipment:

A plate

Method:

Step one: Make sure you have washed and dried your strawberries, then one by one place them into the bowl of chocolate making sure to get all around the sides of the strawberries.

Step two: Place them on a bowl that is big enough to big in your fridge. If you are dipping the strawberries into sprinkles, then wait for the chocolate to drip off of the strawberries and then dip them into the sprinkles. If you are just wanting to put chocolate on them, pop them in the fridge for 10-20 minutes, until the chocolate is fully dried.

Step three: Once you have decorated them, put them back in the fridge for another 5-10 minutes and then once they are dried they are ready. ( Strawberries are always better cold anyway 🙂 )

T H E   P E R F E C T   P O P C O R N   M I X #1

Ingredients:

Sweet & Salted popcorn

Pink or red food colouring / gel

White chocolate

Sprinkles

Chocolate

Could add marshmallows

Equipment:

A bowl

A knife

Method:

Step one: Get some food colouring / gel and squeeze it all over the popcorn. Then using your hands mix it all together, so it coats the popcorn.

Step two: Cut up some chocolate and sprinkle in some chunks of chocolate and then add some sprinkles over it.

Step three: Get some white chocolate and drizzle this over everything. Place this in the fridge for 5 minutes. Then you are done.

(just be careful with the food colouring / gel as it won’t completely dry, it might come off on your fingers)

T H E   P E R F E C T   P O P C O R N   M I X #2

Ingredients:

Sweet & Salted popcorn

Melted chocolate

Love heart sprinkles

Equipment:

A bowl

Method:

Step one: Drizzle the melted chocolate over the popcorn and then sprinkle on the love heart sprinkles.

Step two: Place it in the fridge for 5 minutes.

Today I have for you a VERY VERY VERY random selection of some of my favourite things half way through time this month/end of November. I have been mostly obsession over some of these things, as I have really enjoyed what ever it is. I hope you like this post and I hope your December is going well so far.

Santas Travels Reversible Duvet Covers

My first favourite is my bed sheets that you will see throughout this post. They are blue and have Santa and reindeer’s on them. I love that they are really different Christmas bedding, they aren’t your typical Christmas bedding and I think they are cool. They are also Reversible and on the other side they have red and white strips which reminds me of candy canes. They make amazing backgrounds for my blooms posts haha. I have been loving them since I brought them, very snug and christmasy.

Ultimate Christmas Playlist

I made a Spotify Christmas playlist and it was actually in my first Blogmas post this month, I am obsessed with it. It is such a good playlist, I am kind of proud about it. If you get a chance to check it out I really would 1) appreciate it and 2) recommend it. I know the order of the songs which just shows that I am too obsessed. I like linking it to my car’s radio and listening to it while I am driving, Christmas songs in the car is the best.

Zoella Cream Scrub

I got this in the summer when her range first launched and I love it so much. I have been using it for a while because it really exfoliates/moisturises my skin when I use it and I absolutely love this smell. The smell from this range is definitely my favourite scents out of all of her ranges. I love that it isn’t just like a normal body scrub because it is really creamy too so you have to really rub it onto your skin to lather it up. Guys, I have an obsession. I love this film so much, I watch it at least once a day and someone like 3 times, I just leave it on. I think this film is sooo amazing and has such an amazing storyline. If you haven’t seen it then you need to because it is really good and anyone will love it. It is apart of my best Christmas films to watch blogmas post where I go into more detail about the film.

Primark Individual eyelashes

I really want to get into doing my own individual eyelashes and so I have been using these Primark ones. They are only £1 which is good because I am practising still and also primary Sultry lashes are some of my absolute favourite lashes. I like putting these lashes on the outer corner of my eyes to give them more volume and it really makes your  eyes stand out. There are 60 in a pack which is good considering they are £1, and they have different lash lengths in case you want smaller ones or if you want big ones.

Bisto Gravy

Yes, I had to add it.. it wouldn’t be the same without it. It is Bisto Gravy!! in the picture below I had to use the Beef one we had, but I do actually loveeee the chicken one. I think it is so yummy and I have it with literally every dinner. Nothing beats having gravy on your dinner, especially during the colder months because gravy is everything. It keeps me so warm and honestly makes me so happy to eat my dinner.

All the Bright Places

I have been completely sucked into this book. IT IS FAB! such a brilliant book, I haven’t finished it all yet but I am really enjoying reading it. This is the blurb on the back of the book ..

Mince pies

YES, MINCE PIES! I love a good mince pie. They are such an essential part to Christmas, without mince pies is it really Christmas?

These are sooo good and I could literally sit there eating them all day. They are such a good snack to have if you are feeling abit peckish (only annoying thing is that they are high in calories) but other than that. I would recommend!! Comment below if you had never had a mince pie before, and also how many boxes of mince pies do you go through over Christmas 

After writing this out, I legit went downstairs and got a mince pie hahaha!

Rimmel Stay Matte in Fire Starter & Define & Perfect Eyebrow Powder Collection (this product has been discontinued, I have just noticed now)

The Rimmel Stay matte lipsticks are really good, probably my favourite liquid lipsticks currently. They stay on all day and they are so lightweight, they don’t get cakey on your lips and they don’t go crusty. You apply it and it will stay on all day without cracking or creasing. This colour is so stunning, such a red Christmasy colour. I will apply it in the morning when I get ready and it will still be on by the end of the day, even after everything I have eaten and drunk throughout the day.

Collection eyebrow powder, I received this in my Glossybox for November and have been using it ever since. I just clicked on the link for Superdrug and apparently it has been discontinued, which is sooo annoying because I wouldn’t have included it because you can’t get it anymore. However, I love how it makes my brows look, it makes them really defined and it matches my eyebrow colour perfectly. The nib is like an eyeliner nib, which is really different to use on my eyebrows but it works so well.

Liz Earle Cleanse and Polish

I have been using this for a couple of months now and I am obsessed with it. It makes my skin look and feel so good. I don’t use it to take off my makeup, but I use it to cleanse after taking my makeup off. It gets rid of all of the crap still left on my face after taking my makeup off. I think that it is really good that it comes with 2 cloths and I would highly recommend this product, it is definitely worth the money.

I love these two hats because if I want to wear a really thick chunky hat then the pink one is that or if I want to wear a hat but one that isn’t as big and thick then I will wear the beanie one. The pink one is such a lovely cute pink colour and it is really thick so it keeps my head and ears warm and it goes well with my pink coat. I love the other hat because it is such a lovely burgundy colour and it goes well with my Rimmel Matte lipstick and it is such a nice christmasy colour. They are both really good winter hats and I would definitely check out Primark’s hat section because they have a wide variety.

December faves so far | Blogmas day 17

Hello guys and welcome to Blogmas day 17!

Today I have for you a VERY VERY VERY random selection of some of my favourite things half way through time this month/end of November. I have been mostly obsession over some of these things, as I have really enjoyed what ever it is. I hope you like this post and I hope your December is going well so far.

Santas Travels Reversible Duvet Covers

My first favourite is my bed sheets that you will see throughout this post. They are blue and have Santa and reindeer’s on them. I love that they are really different Christmas bedding, they aren’t your typical Christmas bedding and I think they are cool. They are also Reversible and on the other side they have red and white strips which reminds me of candy canes. They make amazing backgrounds for my blooms posts haha. I have been loving them since I brought them, very snug and christmasy.

Ultimate Christmas Playlist

I made a Spotify Christmas playlist and it was actually in my first Blogmas post this month, I am obsessed with it. It is such a good playlist, I am kind of proud about it. If you get a chance to check it out I really would 1) appreciate it and 2) recommend it. I know the order of the songs which just shows that I am too obsessed. I like linking it to my car’s radio and listening to it while I am driving, Christmas songs in the car is the best.

Zoella Cream Scrub

I got this in the summer when her range first launched and I love it so much. I have been using it for a while because it really exfoliates/moisturises my skin when I use it and I absolutely love this smell. The smell from this range is definitely my favourite scents out of all of her ranges. I love that it isn’t just like a normal body scrub because it is really creamy too so you have to really rub it onto your skin to lather it up. Guys, I have an obsession. I love this film so much, I watch it at least once a day and someone like 3 times, I just leave it on. I think this film is sooo amazing and has such an amazing storyline. If you haven’t seen it then you need to because it is really good and anyone will love it. It is apart of my best Christmas films to watch blogmas post where I go into more detail about the film.

Primark Individual eyelashes

I really want to get into doing my own individual eyelashes and so I have been using these Primark ones. They are only £1 which is good because I am practising still and also primary Sultry lashes are some of my absolute favourite lashes. I like putting these lashes on the outer corner of my eyes to give them more volume and it really makes your  eyes stand out. There are 60 in a pack which is good considering they are £1, and they have different lash lengths in case you want smaller ones or if you want big ones.

I have been loving using the eyeshadow brush and the complexion brush.

Bisto Gravy

Yes, I had to add it.. it wouldn’t be the same without it. It is Bisto Gravy!! in the picture below I had to use the Beef one we had, but I do actually loveeee the chicken one. I think it is so yummy and I have it with literally every dinner. Nothing beats having gravy on your dinner, especially during the colder months because gravy is everything. It keeps me so warm and honestly makes me so happy to eat my dinner.

All the Bright Places

I have been completely sucked into this book. IT IS FAB! such a brilliant book, I haven’t finished it all yet but I am really enjoying reading it. This is the blurb on the back of the book ..

If this sounds like your kind of book then I would 100% recommend it. It is funny, heart warming and you really get sucked into it and once you read the first chapter you honestly can’t put it down.

Mince pies

Any 2 for £2

YES, MINCE PIES! I love a good mince pie. They are such an essential part to Christmas, without mince pies is it really Christmas?

These are sooo good and I could literally sit there eating them all day. They are such a good snack to have if you are feeling abit peckish (only annoying thing is that they are high in calories) but other than that. I would recommend!! Comment below if you had never had a mince pie before, and also how many boxes of mince pies do you go through over Christmas 

After writing this out, I legit went downstairs and got a mince pie hahaha!

Rimmel Stay Matte in Fire Starter & Define & Perfect Eyebrow Powder Collection (this product has been discontinued, I have just noticed now)

The Rimmel Stay matte lipsticks are really good, probably my favourite liquid lipsticks currently. They stay on all day and they are so lightweight, they don’t get cakey on your lips and they don’t go crusty. You apply it and it will stay on all day without cracking or creasing. This colour is so stunning, such a red Christmasy colour. I will apply it in the morning when I get ready and it will still be on by the end of the day, even after everything I have eaten and drunk throughout the day.

Collection eyebrow powder, I received this in my Glossybox for November and have been using it ever since. I just clicked on the link for Superdrug and apparently it has been discontinued, which is sooo annoying because I wouldn’t have included it because you can’t get it anymore. However, I love how it makes my brows look, it makes them really defined and it matches my eyebrow colour perfectly. The nib is like an eyeliner nib, which is really different to use on my eyebrows but it works so well.

Liz Earle Cleanse and Polish

I have been using this for a couple of months now and I am obsessed with it. It makes my skin look and feel so good. I don’t use it to take off my makeup, but I use it to cleanse after taking my makeup off. It gets rid of all of the crap still left on my face after taking my makeup off. I think that it is really good that it comes with 2 cloths and I would highly recommend this product, it is definitely worth the money.
